Description
Similar to fried rice, but a healthier alternative using farro. Feel free to substitute it with other healthy alternatives.
Ingredients
250g ounces farro, cooked
3 tsp olive oil
1/2 white onion, chopped
2 garlic cloves, minced
1/2 cup carrot, diced
1 cup ham, chopped
1 cup pineapple, chopped
6 tbsp soy sauce
1 tsp brown sugar
1 tsp hot sauce (e.g. sirracha or tabasco)
3 tsp sesame oil
2 tsp sweet chili sauce
4 tsp peanut butter
1 tsp rice vinegar
2 green onions, sliced thinly
Directions
In a small bowl, whisk together soy sauce, brown sugar, hot sauce, sesame oil, sweet chili sauce, peanut butter and rice vinegar.
Heat your frying pan on medium heat and add oil. When oil is hot add, onion, garlic and carrots then fry for 1-2 minutes (make sure to toss frequently so the vegetables don’t burn). Add ham and pineapple, cook another 2 minutes until carrot and onion are softened.
Add farro, cook two minutes, stirring frequently.
Pour sauce over farro, and continue to cook for 1-2 minutes.. Toss in sliced green onion.
Enjoy the meal.
