Raspberry Infused Vodka


Description

Transform raspberries and vodka into a spiced liqueur fancy enough for your holiday cocktail party or to gift to friends and family. Plan ahead since it takes 3 to 4 weeks for the raspberries to steep into the vodka. You can any spices you'd like to create additional flavour.

Ingredients

6 Cups raspberries
1 1/2 cups granulated sugar
12 cups vodka, or enough to top off your vessels
Fresh whole spices of choice: cinnamon stick, split vanilla bean, rosemary sprig, fresh bay leaf, peeled chunk of ginger, lemongrass.

Directions

Distribute berries amongst 6 clean, sealable bottles, carafes or large canning jars.

Add spice of choice and ¼ cup sugar to each bottle and fill to an inch of the brim with vodka.

Cover tightly, gently shake a few times, and place bottle in a cool, dark place (such as a pantry cupboard) where you might encounter it at least every few days.

Keep bottle at cool room temperature for 3 to 4 weeks, remembering to gently shake every few days.

Once the desired colour and flavour has been achieved, strain the liquid and add the vodka back into the vessels. Discard the solid ingredients. If desired add in fresh raspberries before gifting.

The liqueur can keep at room temperature for up to a year and the aging with help to smooth the flavour. If fresh raspberries are added back to the liqueur it must be refrigerated but will keep for several months.
