Quick Pickled Cucumber


Beautiful summer's addition to any meal.


1 kg short cucumber
2 (approx) cups of dill
10 (approx) cherry and currant leaves
6 cloves garlic
2 l water
4 tbsp salt


Put all ingredients together in a glass or enamel bowl.

Dissolve salt in cold water and top up cucumbers with.

Place a plate with a weight over the cucumbers (a tin of tomatoes for example).

That's it.

Chill and enjoy after 5-6hours or even next day or so on...
